Get ready to celebrate St. Patrick’s Day with this delicious Cookie Cake that is perfect for kids and adults alike! With our easy step by step instructions and a few festive decorations, you can make this treat the perfect addition to any St. Patrick’s Day celebration.

This recipe is easy and kid-friendly, and the result is a festive and tasty dessert that everyone will love. So put on your aprons, grab your ingredients, and let’s get baking!

Time: 1 hour 30 minutes
Yield: 12-15 cupcakes

Ingredients:

  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar
  • 1 egg
  • 1 1/2 tsp. vanilla extract
  • 1  1/4 cups flour
  • dash of salt
  • 1 cup semi-sweet chocolate chips

Buttercream:

  • 1/2 cup butter
  • 2 cups confectioners sugar
  • 2-3 Tbsp. heavy cream
  • green food dye
  • festive sprinkles (optional)
  • Edible gold dust (optional)

Directions:

  1. Preheat the oven to 350 degrees F and grease an 8” circular pan with non-stick spray. Set aside. 
  2. In a medium sized bowl, whisk together the melted butter and brown sugar until smooth. 
  3. Add in the egg and vanilla. Continue to whisk. 
  4. Pour the flour and salt into the wet ingredients mixture and mix until just combined. 
  5. Add the chocolate chips to the cookie dough and mix until they are evenly distributed throughout.
  6. Transfer the the cookie dough to the prepared baking pan. Use a siluicone spatula to help spread the cookie dough evenly in the pan.
    Bake for 20-25 minutes or until golden brown on the sides and the top. 
  7. Allow this to cool completely in the pan before removing and decorating. 
  8. To make teh buttercream, whisk together the butter and confectioners sugar until the mixture looks crumbly. Slowly add in the heavy cream until it becomes nice and smooth. Add your desired amount of green food dye. 
  9. Transfer the buttercream to a piping bag fit with a large star tip and pipe swirls along the border. 
  10.  Decorate with sprinkles, gold dust, gold coins – whatever you want! Always remember to be creative and have fun.
