Seaside Pasta Salad

[vc_row][vc_column][vc_column_text]For a healthy treat by the sea, try this yummy Seaside Pasta Salad!

 

Ingredients:

9 oz. pasta – bow, elbow, or shell pasta works best

1 ½ cups chopped frozen vegetables

⅓ cup canned corn

½ red pepper, chopped

1 ½ Tbsp. olive oil

1 tsp. honey

½ tsp. dried mixed herbs- coriander, parsley, or oregano work best

¼ tsp. dijon mustard

Optional: Add canned tuna, shredded chicken, shredded crab, or lobster

 

Directions:

1. In a pot, boil the pasta according to the cooking instructions on the package.

2. Four minutes before the end of cooking time, add the frozen vegetables to the pot.

3. Drain the pasta and vegetables, and run under cold water for 30 seconds. Then add to a large bowl.

4. Mix in the corn and red pepper.

5. In a small bowl, whisk together the olive oil, honey, dried herbs and mustard.

6. Pour the dressing over the pasta salad and mix well.

7. Serve immediately or keep in the fridge for up to 2 days. Enjoy!
