[vc_row][vc_column][vc_column_text]Celebrate National Mango Day with these yummy mango muffins.
Ingredients:
1 ½ cups self-rising flour
½ tsp. baking soda
⅔ cup sugar
⅓ cup vegetable oil
2 tsp. vanilla extract
1 ¾ cups mango purée
Directions:
1. Preheat the oven to 350° F. Place 12 muffin cups in a muffin pan.
2. Sift flour and baking soda into a bowl. Stir in sugar. Make a well in the center.
3. In a small bowl, whisk together the oil, vanilla and 1 ½ cups mango purée.
4. Gradually stir the mango mixture into the flour mixture until smooth and well combined. Do not overmix.
5. Divide mixture among prepared muffin pans. Bake for 20-25 minutes, or until a skewer inserted into the center comes out clean.
6. Remove from the oven and allow muffins to cool in the tray for 5 minutes before transferring to a wire rack to cool completely.
7. Brush the top of each muffin with the remaining purée. Enjoy!
