Ingredients:

  • 1 ½ ripened bananas
  • 1 ½ cups flour
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. cinnamon
  • ¼ tsp. salt
  • 6 Tbsp. softened unsalted butter
  • 6 Tbsp. sugar
  • 2 Tbsp. brown sugar
  • 1 egg
  • ¾ cup milk

Directions:

  1. Preheat the oven to 350 degrees F. and fill a cupcake pan with liners. 
  2. In a medium bowl combine the following ingredients, the flour, baking powder, baking soda, cinnamon and salt. Whisk together then set aside. 
  3. In a separate bowl mash the banana together with a fork. Once your banana mixture is mashed and smooth, add in the butter, white sugar, brown sugar and egg. Continue to mix until there are no lumps. 
  4. Slowly add the dry ingredients into the wet. As you mix, slowly add in the milk. Continue to whisk everything together until you have a nice smooth batter. It is okay if there are little banana pieces!
  5. Scoop your batter into your cupcake liners filling it about ¾ of the way full and bake for 15-18 minutes. Insert a toothpick in the center of your cupcake, if it comes out clean then your cupcakes are ready to be taken out of the oven. 
  6. Let your cupcakes cool completely before we decorate them. 
  7. Now that the cupcakes have had time to cool we can start decorating. Take your stencil and place it over the cupcakes making sure that it is centered. Using a sifter or thin strainer, sprinkle the powdered sugar over the cupcake/stencil just enough so that the area around the stencil is covered. 
  8. Gently pick up the stencil using a fork on each side of the stencil to lift it up off the cupcake. 
  9. Repeat this process for each cupcake until they are all decorated. Enjoy!
