Energy Bites

These delicious energy bites are just the trick for a yummy on the go snack!

Ingredients:

  • 1 cup rolled oats
  • 2 Tbsp. shredded coconut
  • 1/2 cup peanut butter
  • 1/4 cup mini chocolate chips
  • 1 tsp. vanila
  • 1/3 cup honey

Directions:

  1. In a medium sized bowl combine each ingredient together and mix using a fork.
  2. Mix the ingredients until everything is evenly distributed.
  3. Scoop the mixture into 2 Tbsp. sized pieces and roll evenly into balls.
  4. Place each energy bite onto a cookie sheet lined with parchment paper. Continue to scoop and roll until the mixture is used up.
  5. Place the cookie sheet of rolled energy bites in the fridge to set for 15 minutes.
  6. Enjoy! These can be stored in an air tight container stored in the fridge for up to 1 week.
