These delicious energy bites are just the trick for a yummy on the go snack!
Ingredients:
- 1 cup rolled oats
- 2 Tbsp. shredded coconut
- 1/2 cup peanut butter
- 1/4 cup mini chocolate chips
- 1 tsp. vanila
- 1/3 cup honey
Directions:
- In a medium sized bowl combine each ingredient together and mix using a fork.
- Mix the ingredients until everything is evenly distributed.
- Scoop the mixture into 2 Tbsp. sized pieces and roll evenly into balls.
- Place each energy bite onto a cookie sheet lined with parchment paper. Continue to scoop and roll until the mixture is used up.
- Place the cookie sheet of rolled energy bites in the fridge to set for 15 minutes.
- Enjoy! These can be stored in an air tight container stored in the fridge for up to 1 week.
