Honey Corn Muffins

[vc_row][vc_column][vc_column_text]We’ve got a yummy muffin recipe today that combines two of our favorite fall flavors: honey and corn.

 

Ingredients:

1 cup yellow cornmeal

1 cup self rising flour

¼ cup granulated sugar

1 tsp. salt

1 cup half & half

2 large eggs

⅛ cup unsalted butter, melted & then cooled slightly

¼ cup honey

 

Directions:

1. Preheat the oven to 400° F. Line a 12-hole muffin pan with cupcake liners.

2. Whisk the cornmeal, flour, sugar, and salt together in a large bowl.  Set aside.

3. In a medium bowl, whisk together the half & half, eggs, melted butter, and honey.

4. Pour the wet ingredients into the dry ingredients and stir until just mixed.

5. Evenly divide the mixture into the prepared muffin pan & bake for 15 minutes or until golden.

6. Allow muffins to cool before serving. Enjoy!
