Holiday Pinwheel Cookies


These cookies are so festive and fun to make with the family! Besides the delicious sugar cookie flavor they look so pretty and are totally customizable to whatever colors you want! I’m going to be honest, they do take some time and patience but they are SO worth it! I will provide pictures along the way to help you through the rolling, chilling, and slicing process so don’t worry and HAVE FUN! :)

Recipe: 

  • 1 1/2 sticks unsalted softened butter
  • 3/4 cup sugar
  • 1 egg
  • 1 tsp. vanilla
  • 2 cups all purpose flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • Food gel coloring of your choice

Directions:

In a medium sized bowl measure and whisk all of your dry ingredients then set aside.

In another bowl combine your butter and sugar with a hand mixer or whisk and mix until there are no lumps and your mixture is light in color and fluffy.

Add in your egg and vanilla and mix until combined.

Next, you are going to add all of your dry ingredients to the wet mixture and continue to mix on low speed until a nice soft dough forms. Make sure to not over mix. Now we are going to separate the dough into 3 equal parts (it doesn’t have to be perfect just do your best to eyeball the portions). Go ahead and color each dough whatever colors you decide. As you can see I used red, green and white. Now you will make them into discs and wrap in plastic wrap. Set your dough in the fridge for 30 minutes.

After your dough has chilled it’s time to start rolling! Use flour on the roller and under dough to avoid the dough sticking. Roll out each color separately and eyeball again to try and make them roughly the same length and width. You’ll want to keep the dough rolled thin, about 1/2″.

Next you are going to carefully pick up your dough and layer them on top of one another. Carefully take your dough at one edge and roll inward to form a log. Use the pictures as references to help you along the way. As you can see I cut off just the edges of the log. Wrap the log in plastic wrap and put it back in the fridge for another 15-30 minutes.

We are almost there! Once your log has chilled go ahead and make 1″ sliced cookies. Place them on your cookie sheet under a silicone mat or parchment paper. Make sure they are about 2″ apart. These cookies won’t spread too much in the oven but it’s better to be safe than sorry and avoid one big cookie forming in the oven…unless that’s what you want, it does sound pretty awesome!

Bake your cookies for 10-12 minutes or until golden brown on the bottom. Let them cool before serving and enjoy! If you really want to mix things up, make a Ince cream cookie sandwich and use your pinwheels as the “bread” :) YUMMY!
