This sandwich is easy to make, healthy, and delicious! It has a boost of flavor from the pesto and an added crunch from a layer of potato chips. It’s the perfect treat for Dad on Father’s Day or to make any time of the year!
Ingredients:
- 1 large loaf of bread
- 1 small tomato
- 2 large lettuce leaves
- 6 thin slices turkey
- 6 thin slices of salami
- Handful potato chips
Classic Pesto:
- 1/4 cup oil
- 1/4 cup pine nuts
- 1 garlic clove
- 1-3 Tbsp. water
- 2 cups fresh basil, loosely packed
- 1 tsp. kosher salt or sea salt
- juice of one lemon
Directions:
- In a blender, add all the ingredients for the pesto.
- Blend on the highest setting for a minute or until the pesto is smooth.
- If you prefer a thinner consistency, add one tablespoon of water at a time until you get your desired consistency.
- Carefully slice your breadstick across the center.
- Slice your tomatoes and prepare your lettuce leaves.
- Spread a thin layer of pesto over both sides of the bread.
- Top it with the lettuces leaves and sliced tomatoes.
- Layer the turkey and salami over the vegetables.
- Add a layer of crunchy potato chips.
- Top with the second half of your bread.
- Enjoy!
