Who wouldn’t want to start their day off with a tall stack of pancakes?! Whether your gluten intolerant or just prefer to avoid it everyone should be able to enjoy pancakes! This recipe is simple, delicious and of course, gluten free :) Enjoy!
Ingredients:
- 1 cup gluten free all-purpose flour
- 1 Tbsp. gluten free baking powder
- Pinch of salt
- 1/4 tsp. cinnamon
- 2 1/2 Tbsp. sugar
- 1 1/2 Tbsp. vegetable oil
- 1 egg
- 3/4 cups milk
- Blueberries (optional)
Directions:
- In a medium sized bowl whisk together the flour, baking powder, salt, and cinnamon until well combined then set aside.
- In a separate medium sized bowl whisk together the sugar, oil, egg and milk. Slowly pour the dry ingredients into the wet and whisk until the mixture is nice and smooth and there are no lumps.
- Fold in blueberries, chocolate chips or whatever your favorite pancake pairing is :)
- Add 1/2 Tbsp. of butter onto a large pan and let it melt completely on medium to low heat. Scoop 1/4 cup of the batter onto the pan and allow to cook for 3-5 minutes or until bubbles pop up all over the top. That’s when you’ll know it’s ready to be flipped!
- Continue scooping and cooking each pancake until all of the batter is used up. Enjoy!
