The origins of red velvet cakes and cupcakes are a highly debated topic, with various states and countries trying to stake claim as the creators of the red velvet cake. They first started being heard about in the early 20th century.
One place it is thought to originate from is Maryland. Another group that claims it is the New York Waldorf-Astoria Hotel. They’ve dubbed the confection as “Waldorf-Astoria Cake”.
Red velvet cakes were also being made in Canada. All of the restaurants and bakeries in the Eaton department stores featured red velvet cakes. The employees who were aware of the recipe were sworn to secrecy, as this was an exclusive recipe.

There are even reports that red velvet cakes date back to the time of the Great Depression. According to the claims, at that point red velvet cake got its color due to a chemical reaction between the cocoa powder, vinegar and buttermilk. The color was more of a maroon tinge.

But then a food coloring company, Adams Extracts, came up with a marketing ploy. It was during the Great Depression and they wanted to boost their sales. They displayed pictures of red velvet cake in groceries throughout the South and Midwest, hoping to bring this delicious cake to kitchens around the country.

Adams Extracts happened to have been the first company to produce red food coloring, and the people knew that. Along with every purchase made from that company, they gave a free cake recipe card and two bottles of red food coloring. The ploy worked and thousands of households started making the red velvet cake that many of us make today.
