Ingredients:
- 1 1/4 cups old fashioned oats
- 1 cup all-purpose flour
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/4 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted softened butter
- 1 egg
- 3 tsp. vanilla extract
- 1 cup semi sweet chocolate chips
Directions:
- Preheat the oven to 350° F and line a cookie sheet with parchment paper then set aside.
- In a medium sized bowl, combine together the oats, flour, baking soda and salt. Whisk them until they are fully combined.
- In a serrate bowl, cream together both sugars and the butter. Whisk together until the mixture is smooth and creamy and there are no lumps.
- Add in the egg and the vanilla extract to the butter and sugar mixture. Continue to whisk until smooth.
- Add the dry ingredients to the wet ingredients and use a silicone spatula to combine.
- Add in the chocolate chips and fold until the dough is fully combined and everything is evenly distributed.
- Scoop the cookies into 1 1/2 Tbsp. scoops and place on the prepared cookie sheet.
- Bake the cookies for 8-10 minutes or until golden brown on the bottom.
- Allow the cookies to cool on a cooling rack then enjoy!
