Ingredients:

  • 1 1/4 cups old fashioned oats
  • 1 cup all-purpose flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted softened butter
  • 1 egg
  • 3 tsp. vanilla extract
  • 1 cup semi sweet chocolate chips

Directions:

  1. Preheat the oven to 350° F and line a cookie sheet with parchment paper then set aside.
  2. In a medium sized bowl, combine together the oats, flour, baking soda and salt. Whisk them until they are fully combined.
  3. In a serrate bowl, cream together both sugars and the butter. Whisk together until the mixture is smooth and creamy and there are no lumps.
  4. Add in the egg and the vanilla extract to the butter and sugar mixture. Continue to whisk until smooth.
  5. Add the dry ingredients to the wet ingredients and use a silicone spatula to combine.
  6. Add in the chocolate chips and fold until the dough is fully combined and everything is evenly distributed.
  7. Scoop the cookies into 1 1/2 Tbsp. scoops and place on the prepared cookie sheet.
  8. Bake the cookies for 8-10 minutes or until golden brown on the bottom.
  9. Allow the cookies to cool on a cooling rack then enjoy!
