Ingredients:
- 3/4 cups flour
- 1/2 tsp. pumpkin pie spice
- 1/4 tsp. cinnamon
- 1/4 tsp. baking soda
- 1/2 tsp. cream of tartar
- dash of salt
- 1/4 cup unsalted softened butter
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1 egg yolk
- 1 tsp. vanilla extract
- 1/4 cup pumpkin puree
- 2 tsp. cinnamon
- 1/2 cup sugar
Directions:
- Preheat the oven to 350° F and line a cookie sheet with parchment paper or a silicone mat.
- In a medium sized bowl, whisk together the flour, pumpkin pie spice, cinnamon, baking soda, cream of tartar, and salt. Set aside.
- In another bowl, whisk together the softened butter, sugar and brown sugar until light and fluffy.
- Add in the egg yolk, vanilla extract and pumpkin puree to the wet ingredients. Whisk until smooth.
- Slowly mix the dry ingredients into the wet and continue to mix until a nice, soft dough has formed.
- Set the dough aside and mix together the cinnamon and sugar to make the coating.
- Scoop and roll 1 1/2 Tbsp. sized balls of dough.
- Roll the ball of dough in the cinnamon sugar mixture to coat the entire cookie.
- Place the ball of dough on a cookie sheet keeping about 2 inches in between each.
- Bake for 10-12 minutes or until golden brown on the edges.
- Let the cookies cool on the pan before removing.
