Hot Cocoa Cookies
Wait a minute…the coziest holiday drink in cookie form?! YES PLEASE! These chocolate cookies with soft marshmallow bits and peppermint pieces and topped with toasted marshmallows making it even yummier are going to brighten your season! Remember to have fun with these recipes and always feel free to make them your own. If you like peppermint hot cocoa then add it along with me. If you like white chocolate cocoa, add white chocolate chips! Just have fun with it and enjoy the memories you are making :)
Recipe:
- 2 sticks of softened unsalted butter
- 1 egg
- 1 tsp. vanilla
- 1/2 cup white sugar
- 1/4 cup light brown sugar
- 1 1/2 cup flour
- 1/4 cup cocoa powder
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 cup small bits of marshmallows
- 1/4 cup finely crushed peppermint
Directions:
Preheat the oven to 350 degrees F. and line 2 cookie sheets with parchment paper or a silicone mat.
In a medium sized bowl measure and whisk your dry ingredients then set aside.
In another bowl whisk your butter and sugar until there are no lumps. Go ahead and add in your egg and vanilla. Mix until everything is combined and smooth.
Add in your dry ingredients and mix until a soft dough forms. It is so important that your cut up the marshmallow pieces very small and crush the peppermint super fine so that when the cookies bake you don’t have a melty mess of marshmallows and peppermint on the pan. With a rubber spatula fold in the small pieces of marshmallows and half of the finely crushed peppermint. Scoop your dough into 1 Tbs. sized balls and place 2″ apart from each other on the cookie sheet.
Bake for 10-14 minutes. Right when they come out of the oven and are still hot you can top with the remaining crushed peppermint. I also added a few more pieces of marshmallow and toasted them using a cooking torch. If you don’t have a torch but would also like the toasted marshmallow on top, set your oven to broil on high. When you are all done baking, throw your cookies back in the oven for a few seconds until the marshmallow is nice and brown. Be carful that you don’t over toast them on broil because they will toast and brown fast.
