- 4 Tbsp. unsalted butter
- 10 oz. mini marshmallows
- 6 cups rice krispie cereal
- 2-3 drops green food dye
- 2-3 drops of red or pink food dye
- ¼ cup semi-sweet chocolate chips
Directions:
- In a large pot, place the butter and marshmallows over medium heat on the stove top. Use a silicone spatula to mix these two ingredients until they are evenly incorporated and begin to melt.
- Once the marshmallows are fully melted and there are no lumps, remove from heat then add in the rice krispies. Continue to use a silicone spatula to combine everything evenly.
- Remove about 2 cups of the mixture and transfer to a medium sized bowl. Dye this green.
- Dye the remaining rice krispies pink.
- In an 8” circular pan, pour the green rice krispies. Continuously dip your hands in water so the rice krispies don’t stick to your hands. Move the green rice krispies to the edge of the pan. Use the video as reference.
- Pour the pink rice krispies in the center of the pan. Flatten the krispies into the pan nice and evenly.
- Allow these to cool completely in the fridge to set for about 20 minutes.
- Remove the rice krispies from the pan and slice into 8 even triangles. This step is optional but you can stick a popsicle stick in each cake pop.
- Melt the semi-sweet chocolate in 30 second intervals until fully melted.
- Transfer the melted chocolate into a piping bag and cut a small portion of the tip.
- Gently pipe small seeds on top of the pink part of the watermelon.
