[vc_row][vc_column][vc_column_text]Celebrate Labor Day Weekend with these delicious lettuce chicken cups – perfect for a Labor Day picnic! This recipe requires a little more effort and adult supervision, but it’s worth the work ?
Ingredients:
8-10 leaves romaine, for cups
2 boneless skinless chicken breasts
Marinade:
¼ cup sweet chili sauce
⅛ cup soy sauce
Juice of 1 lime
2 Tbsp. olive oil
2 tsp. freshly grated ginger
4 cloves garlic, minced
Garnish:
¼ scallions, thinly sliced
1 carrot, shredded
Directions:
1. Preheat the oven to 375° F.
2. Make your marinade by combining the chili sauce, soy sauce, lime juice, oil, ginger, and garlic in a large bowl. Whisk to combine.
3. Add chicken breasts to the bowl and coat with marinade.
4. Place chicken in a roasting bag and place on a baking tray. Bake for 25-35 or until cooked all the way through and no pink remaining.
5. Transfer to a plate to let it rest for 3-4 minutes. Once rested, thinly dice.
6. Place your lettuce cups on a plate & fill with chicken. Garnish with scallions & shredded carrots. Serve and enjoy!
