Ingredients:
17.3 oz puff pastry sheet
Parchment paper
1 egg, lightly beaten
½ cup store bought custard
3 peaches halved, stoned and thinly sliced
1 Tbsp. coconut flakes
Whip or ice cream, to serve
Directions:
1. Preheat your oven to 375° F. Line a baking sheet with parchment paper.
2. Allow the puff pastry to come to room temperature and unroll pastry onto the lined pan.
3. Use a knife to mark a 1cm border all the way around- be careful not to go all the way through to the bottom of the pastry, it’s just so you have an outline.
4. Prick the whole center inside the border with a fork, then brush all over with beaten egg.
5. Bake for 10-12 minutes until the pastry is golden and rises slightly.
6. Spread the custard over the pastry inside the border and fan out the peach slices on top.
7. Sprinkle coconut flakes on top of the peach slices.
8. Place your baking tray back in the oven for 10 minutes until it has puffed up and is golden. Serve with a dollop of whip or ice cream. Enjoy!
