Comfort Cookies

1 ½ cups coconut flour

1 teaspoon ground cinnamon

1 teaspoon baking soda

Pinch of salt

1 ¼ cups unsalted butter, room temp

1 ¼ cup brown sugar of your choice

¼ cup white sugar

2 eggs

1 teaspoon molasses, honey or pure maple syrup

1 teaspoon vanilla extract

3 cups whole rolled oats

2 cups choc chips or nuts of your choice

 

Directions:

1. Preheat oven to 350°F (177°C). Line baking sheets with parchment paper. Set aside.

2. Whisk or sift the flour, cinnamon, baking soda, and salt together in a medium bowl. Set aside.

3. In a large bowl using a hand mixer or a stand mixer, beat the butter & sugars on medium-high speed until smooth. The beat on high speed until creamed. Add the eggs, molasses, and vanilla and beat on high speed until combined. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine.

4. Add the oats to dry ingredients & the the wet ingredients & mix on low with a beater or by hand. Once nearly combined add chocolate chips. Dough will be thick.

5. Use a large ice cream scoop to scoop the cookie dough, & place 3inches apart on the baking sheets. Bake for 6-8minutes, take out & press down lightly. Place back in oven for another 4-6minutes or until lightly browned on the sides. The centers will be soft.

6. Remove from the oven & allow cookies to cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.

7. Cookies stay fresh in an airtight cookie jar or container. Storage at room temperature. Enjoy!
