Ingredients:
  • 3/4 cups flour
  • 1/2 tsp. pumpkin pie spice
  • 1/4 tsp. cinnamon
  • 1/4 tsp. baking soda
  • 1/2 tsp. cream of tartar
  • dash of salt
  • 1/4 cup unsalted softened butter
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1 egg yolk
  • 1 tsp. vanilla extract
  • 1/4 cup pumpkin puree
  • 2 tsp. cinnamon
  • 1/2 cup sugar

Directions:

  1. Preheat the oven to 350° F and line a cookie sheet with parchment paper or a silicone mat.
  2. In a medium sized bowl, whisk together the flour, pumpkin pie spice, cinnamon, baking soda, cream of tartar, and salt. Set aside.
  3. In another bowl, whisk together the softened butter, sugar and brown sugar until light and fluffy.
  4. Add in the egg yolk, vanilla extract and pumpkin puree to the wet ingredients. Whisk until smooth.
  5. Slowly mix the dry ingredients into the wet and continue to mix until a nice, soft dough has formed.
  6. Set the dough aside and mix together the cinnamon and sugar to make the coating.
  7. Scoop and roll 1 1/2 Tbsp. sized balls of dough.
  8. Roll the ball of dough in the cinnamon sugar mixture to coat the entire cookie.
  9. Place the ball of dough on a cookie sheet keeping about 2 inches in between each.
  10. Bake for 10-12 minutes or until golden brown on the edges.
  11. Let the cookies cool on the pan before removing.
