Salted Caramel Cookies

Ingredients:

  • 1 cup unsalted butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 1/2 tsp. vanilla extract
  • 2 eggs
  • 1/4 cup melted caramels (soft)
  • 4 cups flour
  • 1/2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • handful of chopped caramel candies (soft)

Directions:

  1. Preheat the oven to 350 F. and line a cookie sheet with parchment paper then set aside.
  2. In a medium sized bowl whisk together the butter and both sugars until smooth.
  3. Add the vanilla and 2 eggs. Continue to whisk until everything is nice and smooth.
  4. Melt down 1/4 cup of caramel candies then add to the wet ingredients. Whisk until the caramel is fully combined.
  5. Add the dry ingredients to the wet, the flour, baking powder, baking soda and salt.
  6. Once the dough has come together, fold in the chopped caramel candies.
  7. Scoop the dough in 2 Tbsp. sized scoops and bake for 8-12 minutes or until golden brown.
