If you are celebrating Rosh Hashanah this week, you will likely be adding honey to your shopping list! The holiday celebrates the Jewish New Year, and traditionally, honey is incorporated into recipes to kick off a sweet new year! These delicious Honey Muffins are moist and fluffy, and are a perfect addition to your Fall dessert menu as well. Enjoy!

 

Ingredients:

3/4 cups oil

2 tsp. vanilla sugar

1 1/2 cups sugar

8 eggs

4 cups flour

1 tsp. baking powder

1 tsp. baking soda

2 tsp. coffee, dissolved in

1/4 cup boiling water

1 cup honey

3/4 cup orange juice

 

Directions:

1. Preheat the oven to 350° F and grease a muffin pan with non stick spray then set aside.

2. In  a large bowl, whisk together the oil, vanilla sugar, sugar and 8 eggs until well combined.

3. Add in the remaining ingredients and whisk until the mixture is nice and smooth and there are no lumps. This should take 1-2 minutes of mixing.

4. Fill the muffin pans about 3/4 of the way full.

5. Bake for 20-25 minutes or until a toothpick inserted comes out clean.

6. Let the muffins cool on a cooling rack before enjoying. Serve and enjoy!
