Chocolate Shortbread Cookies, sweet, simple, delicious :) This recipe is super easy so I hope that you all enjoy!

Ingredients:

  • 1 cup unsalted softened butter
  • 3/4 cups granulated sugar
  • 1 egg
  • 2 tsp. vanilla extract
  • 1/4 tsp. salt
  • 2 tsp. baking powder
  • 2 1/2 cups flour (plus extra for rolling)
  • 1 cup semi-sweet Chocolate

 

Directions:

  1. Preheat the oven to 400° F. and line a cookie sheet with parchment paper or a silicone mat.
  2. In a stand mixer fit with the paddle attachment, cream the butter and sugar together on medium speed until it is nice and smooth.
  3. Scrape down the sides of the bowl then add in the egg and vanilla. Mix on low speed for 1-2 minutes.
  4. In a separate bowl whisk together the salt, baking powder and flour.
  5. Add the flour mixture to the wet ingredients while mixing on low speed. Remember to scrap the bowl down to make sure that everything is getting mixed together evenly. Mix everything together for about a minute or until it is fully combined.
  6. Flour your work surface and begin to roll out the dough to about an 1/8″ thick.
  7. Use a circle cookie cutter to cut out as many cookies as you can. Use a smaller circle cutter to create the hole in the center.
  8. Bake the cookies for 8-9 minutes or until golden brown.
  9. Let the cookies cool completely before adding the chocolate.
  10. Melt the chocolate in a microwave safe bowl in 30 second intervals until it is fully melted and nice and smooth.
  11. Dip the bottom of the cookie in chocolate then set on. a piece of parchment paper to set.
  12. While the cookies set, use the remaining chocolate to drizzle over each cookie.  You can drizzle the chocolate by placing the chocolate in a baggie or piping bag then use a back and froth motion over the cookie.
