This recipe is such a fun surprise every time you cut a slice! Much like the other St. Patricks Day dessert this one is also totally interchangeable for whatever Holiday you and your loved ones are celebrating.
Ingredients:
- 6 Tbsp. milk
- 6 eggs
- 4 tsp. vanilla extract
- 2 2/3 cups cake flour
- 1 1/2 cup sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 26 Tbsp. unsalted butter, softened
Directions:
- Wash your hands and preheat the oven to 350° F. Grease a loaf pan and a cookie sheet then set aside.
- Whisk together the milk, eggs and vanilla until the mixture is light and fluffy then set aside.
- In a separate bowl whisk together the flour, sugar, baking powder and salt.
- Add the melted butter to the flour mixture and whisk just until your mixtures thick and hard to mix.
- Slowly in three additions add the egg mixture into your flour and butter mixture.
- Whisk until you have a nice smooth batter with no lumps.
- Transfer about 1/2 of your batter into a separate bowl and dye this bowl green, this will be used to make the shamrocks! Add the green dyed mixture to the cookie sheet and use a silicone spatula to spread it out evenly.
- Bake this for 15-20 minutes.
- Once the green pound cake is done let it cool for about 5-10 minutes. Next you are going to want to use your shamrock cookie cutter to cut out as many shamrocks as you can.
- Once all of your green shamrocks are cut out, stand the shamrock slices at an angle in the loaf pan. Pour the remaining (not colored) batter around and over shamrock slices. Bake the full loaf for 35-40 minutes or until a toothpick inserted comes out clean.
- Let your loaf cool completely before cutting into it. Enjoy!
